How healthy is kombucha
As a rule, these symptoms stop after a few days, when the body has leveled off again. Otherwise, you can reduce the amount or you may find that kombucha is simply not for you - after all, every body is different.
Who should be careful with kombucha
Since there is little research on the effects of kombucha, many people are unsettled. In addition, there are some strange stories circulating on the Internet that increase this uncertainty.
Extreme case: hyperacidity caused by kombucha
For example, there are stories on the Internet of people who were hospitalized with hyperacidity after drinking kombucha. In one case, the person concerned said he had drunk several liters of his home-brewed kombucha every day for weeks, which was so sour that he could hardly swallow it.
Of course, one should always use common sense. Excessive amounts of any food can at some point be harmful. And if your own body is already defending itself while drinking, you should also listen to it.
If you are new to kombucha, it may be wise not to try your own kombucha approach right away. First find out whether you like kombucha and whether you like it before you start experimenting with enthusiasm. Then you will also know roughly how your own kombucha should taste and will be able to better recognize whether you made a mistake in the preparation.
Kombucha for high blood pressure and diabetes
If you suffer from high blood pressure or diabetes, you should also exercise caution and not drink gallons of kombucha per day. Regular sugar intake could negatively affect your symptoms. There are also people who have been helped with kombucha with high blood pressure and diabetes, but each person is ultimately different.
Kombucha for pregnant women and children
Due to the alcohol content, many women avoid kombucha during pregnancy. Although this can be compared with that of other, non-alcoholic foods, such as non-alcoholic beer (0.5%), apple juice (0.3%), orange juice (0.3%) or ripe fruit, it is difficult to determine the exact alcohol content, especially with home-brewed kombucha ascertain.

Kombucha for intolerances
Many people are sensitive to certain foods. When it comes to histamine intolerance, gluten intolerance and fructose intolerance, there are a few points to consider.
Kombucha for histamine intolerance
If you suffer from histamine intolerance, you should rather avoid kombucha. Because fermented foods contain plenty of histamines. In addition, the production of kombucha produces alcohol, which is considered a histamine liberator and increases the release of histamines in the body. In sensitive people, kombucha can cause symptoms such as: B. headaches, red eyes, tiredness and diarrhea.
Kombucha for fructose intolerance
Sugar is used in the production of Kombucha. The processing of sugar produces glucose and fructose - people with fructose intolerance are sensitive to the latter. However, you can try the preparation with rice syrup instead of sugar - this is practically fructose-free.
Instead of slowly getting your SCOBY used to rice syrup as described in the paragraph on sugar content, replace the 100 g sugar from the above basic recipe with 115 ml rice syrup. Because you probably don't want to prepare your kombucha several times before you can drink it without symptoms. With this method, however, there is a higher risk that your SCOBY will not want to make friends with the new food source straight away. Because preparing kombucha is not a science - every preparation liquid and every kombucha mushroom is different. Trying out is therefore the motto.
Kombucha for gluten intolerance and celiac disease
Kombucha is usually gluten-free. However, the following applies: the less natural a product is, the higher the probability that gluten has been added in some form. For example, added flavors can contain wheat - and wheat contains gluten. The tiny amounts of gluten contained generally do not lead to any symptoms in the case of gluten intolerance. If you have celiac disease, it is best to only choose kombucha that is labeled as gluten-free or write to the manufacturer and inquire.
Kombucha for lactose intolerance
If you are lactose intolerant, you can drink Kombucha without hesitation - it is lactose-free.
The difference between kombucha and water kefir
If you're interested in other probiotic drinks as well, water kefir might be for you. The production of water kefir is similar to that of kombucha: With the help of bacteria and yeast, a probiotic drink is created through fermentation. However, water kefir is ready to drink faster: It is only fermented for one to two days. In the second fermentation, you can also flavor it and increase the fizzy effect.
The result is a rather mild drink that tastes less acidic than Kombucha and is also caffeine-free. But water kefir also contains alcohol and sugar. The health effects of unpasteurized water kefir are similar to those of kombucha, but better scientifically proven.
